Djimma is an area in western Ethiopia famed for its natural process coffees, however, it is less well-known as a high-quality coffee region than Harrar and Yirgacheffe. The preponderance of coffees shipped from this region is naturally processed, which means that the coffee cherry is allowed to completely dry around the coffee bean before being hulled. This gives these coffees traditional chocolates, nuttiness, and a hefty body, making them great blend components.
